I have always just used grease and a suitable sized socket. Pack the cavity with grease, find a suitable diameter socket with an extension. If the socket requires a wrap or two of electrical tape to fit snug, even better. Install the extension backwards into the socket so the flat face is going into the pilot bearing. Hit the extension/socket and the pilot bearing comes out.

The only bread in my shop is on my pre-packaged microwaveable pizza subs. I have been having the same pizza subs just about every day for the last 30 years. No pilot bearing is worth messing up a pizza sub.
