If fuel is a problem, go with an electric fuel pump..done this a couple times on CMP trucks as sitting overtime the fuel would run back to the tank.
If pressing the clutch stalls the truck I would suggest maybe something amiss with the clutch setup and or the idle rpm of the engine.
