On 29 June I'll be doing a layover in Amsterdam for about 5 hours. I've been told that the airport is interesting - But what else is there to do?

Charlie:
Take a cab from Central Station (no tipping allowed) to the Krasnapolski Hotel. Very near there is the Anne Frank house. The canals are also very near. You might want to go "window shopping". The live sex shops/shows run 24/7. Beer is cheap and frothy. The bartender paddles it for you.

Apart from the museums Alex mentioned, in another thread I suggested a visit to the Den Hartogh Ford Museum at Hillegom. That's a 20 to 30 min. drive from Schiphol, and you could even take the bus. While there are no military vehicles on display, it is a great place to visit if you have a couple of hours to spend. HTH, Hanno
