Default how 'bout roadkill???

And there are ROADKILL RECIPES ... what creatures are roadkill in your country?

Stuffed Roast Raccoon:

1 lb Sweet potatoes; mashed
1/2 c Raisins
1 c Bread crumbs
2 Apples; peeled and chopped
1/4 c Butter; melted
Salt and pepper to taste
4 lb To 5 racoon First make the stuffing; mix together all ingredients (except raccoon, of course) gently until blended. Set aside. Wash raccoon meat thoroughly and dry with a cloth. Cut off some of the fat, leaving just enough for a thin layer.
Salt the inside of the coon. Stuff gently with the sweet potato mixture and sew opening shut.
Bake at 325°. for about 3-4 hours.
When half done, turn over so all sides will be browned.

Stewed Squirrels:

2 Squirrels
2 qt Boiling water
1/2 lb Fresh corn
1/4 lb Fresh lima beans
4 tomatoes; chopped
1 1/2 ts Sugar
2 or 3 potatoes; in chunks
1/2 onion; sliced
salt and pepper to taste
3 tb Butter Cut the squirrels into pieces.
Put into the boiling water along with the rest of the ingredients, except the butter.
Cover and simmer for about 2 hours; add the butter and simmer another 15 minutes.
Bring to a full boil, remove from the stove and serve.
Tip: grey squirrel is tastier than red squirrel and both better tasting when hunted in the fall. Young squirrels may be fried.

Miss Yappy, Seeing as how you asked, here in New Zealand, it's possums, and hedgehogs. Australian possums,that are protected at home, are in N.Z.,a noxious pest, that cost the country millions of $$$. The hedge hogs are European hedgehogs. Other than that theres ferrets/weasels/stoats, and theres still the odd motorist that tangles with a pig or deer. I've had blood and guts all down the side of my car,----- a pheasant. and lastly myself as passenger in a car banged heads pretty hard, with the driver,when a blackbird slid up over the bonnet, (hood) and hit the bottom centre of the wind screen. ( What any of this has got to do with this forum I don't know).

For THIS, Oh Master Lynne-Eades, I shall share a recipe i just found for Kangaroo-Stew ...

Default Addendum to recipe directions

After placing roo meat in casserole,place brick on casserole lid before putting in oven.This to avoid jumping casserole dish while cooking,at the same time , keeping spilliage to a minimum.

"Kangaroo meat - health secret revealed
The meat of Australia's bush kangaroo may be the highest known source of the healthy fat CLA, a University of Western Australia and CSIRO sponsored PhD student has discovered.

CLA (conjugated linoleic acid) is found in dairy products, beef and lamb.

In trials, CLA has been shown to possess potential anti-carcinogenic and anti-diabetes properties, in addition to reducing obesity and atherosclerosis (high blood pressure).

PhD student Clare Engelke has found that the meat-fat of the Western Grey kangaroo in some circumstances has up to five times higher CLA content than lamb.

"Australian pastoral lamb is considered to be a relatively high source of CLA, so I was surprised to find the levels in kangaroos were that much higher in comparison," Ms Engelke said.

Her study is believed to be the first research on CLA levels in kangaroos available in the public domain.

In collaboration with the University of Adelaide, Ms Engelke compared CLA levels in Western Grey kangaroos and lambs from the Badgingarra region in Western Australia and analysed tissue samples of other Western Greys, Red and Eastern Grey kangaroos from different areas of Australia.

Although kangaroos are not a true ruminant, Ms Engelke became interested in researching Australia's national icon for her PhD in agricultural science because, like ruminants, kangaroos ferment food in their foregut. CLA is produced in the stomach and tissues of ruminant animals such as sheep and cattle during the digestion process.

In Australia, kangaroo meat has traditionally been used for pet food but the European market for the meat grew by 30 percent following the 2001 outbreak of foot and mouth disease.

CSIRO Project Leader Dr Andre Wright said kangaroo meat was very lean with a two per cent fat content.

"Kangaroo meat also has high levels of protein, iron and zinc," Dr Wright said.

Ms Engelke is now working to identify the 'bugs' in the kangaroo's foregut responsible for producing CLA.

"My aim is to find out which microorganisms and circumstances are responsible for CLA formation and why kangaroo meat appears to be the highest known source of these healthy fats," Ms Engelke said.

If successful, it may be possible to increase the CLA content of other meats and products to increase potential health benefits to consumers."

Don't give away too many of our secrets. Create a demand for roo meat and watch the price go up. Just look at lamb shanks, dog food one day $2.50-$3 each the next day, and I love lamb shanks. And have you seen the price of rabbits since the virus. Luckily we have a rabbitter in the area and we can get them at a reasonable price.
Still our millions of roos should be safe if the American nutter greenies have any say in the matter.
